Made with Vita-Pakt #1ss Orange Peel, Orange Juice #128, & #213 Lemon Juice
4 cups chicken broth
1-3/4 pounds whole chicken breasts
1 stalk celery, chopped
1 leek, white part only, chopped
1 cup of Kiwi Puree
2 tblsp of Vita-Pakt Product #1ss Orange Peel
1/8 cup of Vita-Pakt Orange Juice #128(dilute with ½ cup of water)
1/6 cup of Lemon Juice Vita-Pakt #213
1 Tbsp butter
1 Tbsp sugar
1/8 tsp salt
1/8 tsp cayenne pepper
1. Bring chicken broth to a boil in large saucepan. Add chicken and simmer 10 minutes, skimming as needed.
2. Add celery and leek. Simmer 10 minutes longer. Remove chicken from broth, pour kiwi puree over and keep warm in an oven.
3. Melt butter in saucepan and add sugar, stirring until caramelized.
4. Gradually add orange and lemon juices, stirring well. Boil until sauce is reduced to 2 tablespoons. Season with salt and cayenne pepper.
5. Take chicken off bone, remove skin, and slice. Arrange on platter, pour sauce on top, take the finely shred orange peel V-P #1ss and sprinkle over kiwi chicken and serve.
