Baked Chicken with Marmalade Horseradish Glaze: Date Added: 9 Mar 2012

Ingredients

Made with Vita-Pakt #128 NFC Orange Juice

1 (4.5 pounds) fully cooked boneless chicken thigh
12 (about) whole cloves
1 cup water
1/4 cup orange marmalade made from Vita-Pakt recipe and ingredients
2 tablespoons prepared cream style horseradish
2 tablespoons (packed) golden brown sugar
1/2 cups Vita-Pakt Product #128 NFC Orange Juice

Cooking Instructions

1. Position rack in bottom third of oven and preheat to 325 degrees. Place meat on rack set in roasting pan.

2. Using sharp knife, score chicken. Press 1 clove into center of each piece. Pour water into roasting pan. Roast chicken for 30 minutes.

3. Meanwhile, blend marmalade, horseradish, and sugar in a bowl.

4. Remove chicken from oven. Transfer to baking sheet. Discard pan juices. Return chicken to roasting pan.

5. Add orange juice to roasting pan. Brush top of meat with 1/3 of marmalade glaze. Bake 10 minutes.

6. Baste with orange juice in pan, then brush with half the remaining marmalade glaze. Bake another 10 minutes. Baste with in pan and brush with remaining glaze. Roast chicken until heated through, basting every 5 minutes, about 20 minutes longer. Let meat rest 15 minutes. Transfer to platter. Serve chicken warm or hot.
