Asparagus with Mandarin Orange Glaze and Toasted Pine Nuts: Date Added: 3 May 2012

Ingredients

Made with Vita-Pakt's #909 Mandarin Orange Juice Concentrate and #1ss Orange Peel

1/4 cup Vita-Pakt Product #909 Mandarin Orange Juice Concentrate (Syrup)

1/4 cup rice vinegar

1 tsp. of Vita-Pakt Product #1ss Orange Peel (orange zest)

1/2 tsp. kosher salt

Freshly ground pepper

1lb. asparagus

1/4 cup pine nuts, toasted*


Cooking Instructions

In a small saucepan, combine mandarin orange juice and vinegar. Over medium heat, bring to a simmer and reduce by half. Remove from heat and stir in orange zest, salt and pepper. Cook asparagus in boiling salted water for 2-3 minutes or until crisp-tender. Drain well and toss with dressing. Top with toasted pine nuts and serve immediately.

Notes:
Preheat oven to 325 F degrees. Spread pine nuts on a baking sheet and bake until just lightly colored--about 10-15 minutes. Pine nuts burn easily, so be sure to watch them carefully!
