Dark Blood Orange Chocolate Syrup : Date Added: 3 May 2012

Ingredients

Made with Vita-Pakt's#942 Orange Juice Concentrate and #1ss FZ Short Shredded Extra Fine Orange Peel

9 oz Dark chocolate grind (if necessary)

½ cup Vita-Pakt Product #942 Orange Juice Concentrate

1½ cup water

1 ½ cups heavy whipping cream

1 tbsp Vita-Pakt Product # 1ss FZ Short Shredded Extra Fine Orange Peel

¼ cup sugar

Cooking Instructions

1. Place the chocolate in a medium sized stainless steel mixing bowl

2. Pour the cream into a small sauce pan.

3. Add the peel and place over medium heat and bring to boil.

4. Remove from heat and cover pan and allow steeping for 30 minutes with plastic wrap cover.

5. In another small sauce pan mix water, sugar and blood orange concentrate and bring to a moderate boil under medium heat for 15 minutes to reduce by ½. Remove from heat

6. Take cream that has steeped for 30 minutes and remove plastic wrap. Place over medium heat and simmer.

7. Add juice to cream and bring to boil and then remove from heat.

8. Add chocolate and whisk together until melted.

9. Blend further if necessary until smooth.

10. Cool to room temp for usage or you may jar off hot and cool.
