Blood Orange Marmalade: Date Added: 17 Feb 2012

Ingredients

Made with Vita-Pakt's #5 CA Bitter Orange Marmalade, #200 Lemon Juice NFC, #942 Blood Orange Juice, and #2 CA Fine Select Shredded Orange Peel.

1.6 pounds Vita-Pakt Product #5 California Bitter Orange Marmalade Base

1 Cup of Vita-Pakt Product # 200 Lemon Juice NFC

4 Cups of Vita-Pakt Product #942 Blood Orange Juice (diluted 1:5)

12 pounds Granulated Sugar

1.6 pounds Vita-Pakt Product #2 California Fine Select Shredded Orange Peel

22.5 grams Rapid Set Pectin(Mix with a small amount of the sugar to prevent congealing of pectin)

Cooking Instructions

1. Mix Orange Marmalade Base with the lemon juice, water and Blood Orange juice.

2. Add sugar and apply heat, agitate till sugar is dissolved.

3. Add orange peel.

4. Boil to 219 F; add pectin and sugar mixture. Agitate constantly not allowing mixture to cool below 190 F.

5. Fill in glass jars and cap. Invert jars for about 1 minute to achieve cap sterilization. After which jars are to be turned right side up.


Yield: Approximately 40 - Four (4) oz. jars
