Ingredients

Made with Vita-Pakt's #274 Meyer Lemon Juice and #774 Meyer Lemon Zest or #16 FZ Lemon Peel

3 large Egg Yolks

3 large Eggs

¾ Cup Granulated Sugar

½ Cup Vita-Pakt Meyer Lemon Juice (from Product #274 diluted 1:8 with water)

1 Tbls Vita-Pakt Meyer Lemon Zest Product #774 Dry (1 tsp) or #16 FZ lemon peel

3 Tbls Unsalted Butter

Cooking Instructions

1. Whisk together the egg yolks, eggs and granulated sugar.

2. Whisk in the lemon juice.

3. Cook together in a double boiler, stirring constantly until thickened (about 5 to 10 minutes).

4. Remove the pan from the heat and stir in the lemon zest and butter.

5. Place the curd in a bowl and cover with plastic wrap. Refrigerate until cold (at least 30 minutes).
